I have a 37" Westinghouse HD LDC (up to 1080p). I was looking at getting an
Xbox (the older model). Does it have the capibility to display at 16:9? I've
looked at the back of some of the video games and they seem to vary on HD
from 480p to 720p and a couple of 1080i's.

As you've noticed, it will vary from game to game. Also, some of the 480p
games may not do 16:9 - again, check the game.

All of the 360 games will at least do 720p, so they'll all do 16:9.

Unlike the Xbox 360, it changes from game to game. Most all Xbox games
support at least 480P, some also support 720P and a few even support 1080i.
Most support only 4:3 screen sizes, but some also support 16x9, unlike the
360 where all games support at least 720P with 16x9 screen sizes. Anyway
for info on what games support what, I would go here!

Where it lists most games, and tells you is a game supports, 480P, 720P,
1080i, 5.1 surround sound, and Online.
