How can I make special moves with the banshee? (rolls and etc.)

If you hold left and press A you'll roll left, same goes for right. If
you pull back on the stick and press A you'll roll backwards

And A with a forward push on the stick allows you to descend vertically.

I have found that pulling back on the stick (like you would to hover in
Halo 1) causes the Banshee to drop like a stone.

Yes that is the vertical descent. (obviously you and I are using normal and
reversed controls for up/down).
You will also notice that unlike Halo:CE where you could point downward and
then pull back (in non reversed controls) you effectively hovered or even
backed up a bit - this is no longer available in Halo:2 in that you must
maintain forward momentum, so you can no longer "hover" and fire at targets
you must actually fly and strafe them.
