Never flown a real plane, so I'm not sure if these oscillations are
realistic or not. Games like F-15 and Il-2, you have to slowly let go of
the stick, otherwise it bounces back and forth. In games like Falcon 4.0,
you let it go, the pitch or roll just slows down, but doesn't go the other
way. Which game depicts real life flight?

Fly by wire on the F16 maybe?

Like you I've never flown a real F15 or IL2 but I have in general
aviation. Inertia is a very real issue and overcontrol becomes
obvious very, very quickly. For simming t doesn't _really_ matter
when you have altitude and airspeed does it? The light touch is a
sign of the professional.

At the end of the day/mission and in a sim it's only essential for
takeoffs and landings (and strafings and bombings, but those I"ve only
simulated so take it with a grain of salt). Act appropriately WRT to
the light touch. Treat the joystick like an otherwise beyond-reach
woman you've bedded down and are now bringing to a climax and you'll
be ok. (OTOH, if you're a female then invert the sexes and also be
foxy)

The Mustang, Spitfire, T-6 Texan, Stearman and the Mig-17 I piloted all had
oscilations...the Mig had less...the Mustang quite substantial in rudders
(Yaw). The Spitfire in pitch had almost none...but you still had to take it
into consideration. You generally automatically compensated for it.

You mean the F-15 doesn't?

I'm pretty certain the answer is no it doesn't
