I have Ch Rudder Pedals and Fighterstick. I am having a hard time finding
any info or practice tips on how to use rudder at all. Anyone have any
practice tips? Tips that might have a real relationship with real flying
would also be good. How do I get better at using the rudder and when do I
use it?

There is plenty info on using it for taxiing. I know how to do that.

Staying away from aerodynamics and keeping it simple;
On the ground, use the rudder to point the airplane where you want it to go.
In the air, never use the stick that you don't use the rudder with it. Left
stick, left rudder. Right stick, right rudder......together. When you
neutralize the ailerons at the bank you want, neutralize the rudder as well.
I'd advise you to study up on controls and what each one does. There are
cross control uses for the rudder that I'm not dealing with here.
This should get you started anyway :-)

also remember this.... "Step on the ball" and keep the ball centered.
"The Ball" is the normally located in the lower half of the turn
coordinator instrument. In helos, you don't normally need to do
that...just use the stick and bank through the turn (according to the
Helicopter Flying Handbook) and I can't vouch for how good or bad helos
are modeled in FS9...YMMV there.

Do what Dudley and Dallas suggested, too. Good luck!

Dudley's comment "When you neutralize the ailerons at the bank you want,
neutralize the rudder as well." was the key! I've heard "right turn, right
rudder," etc and "step on the ball." Its the part after that they forgot a
saying for.

Actually in helicopters it works the same.
Left turn, left pedal; right turn, right pedal.
The pedals are also used to keep the helicopter balanced in flight
checking the ball (or the fabric strings outside the windscreen
in small helicoters ie. the Robinson 22).
Even in stright and level flight a little amount of left or right pedal
is necessary to maintain the aircraft balanced counteracting
the wind.

At slow speeds (under the ETL speed) the pedals are necessary to yaw the
helicopter
into the direction you want to go (ie. off groung taxing) and keep it.

In helicopter flying the use of the pedals is the hardest thing to learn as
they are
the most important inputs that let you hover and put the machine on the
ground
safely.

If your pedals are new to your FS installation, make sure you turn off "Auto
rudder" in the aircraft realism settings, otherwise you'll end up confused
as to whether they're working properly or not.

If you're serious about learning how to use the rudder correctly, you should
get yourself a basic flying manual from your local flying school. It will
make you a better sim pilot fo sure. If you can stretch to it, Jeppeson's
"Private Pilot's Manual" is a heavy tome full of everything you need to know
in the PPL syllabus. You'll be amazed at how much more enjoyment you can
get out of FS when you start planning proper routes using the basic skills.
